Number of Servings: 6


    1 cup dry brown rice, prepared
    2 tsp olive oil
    1/2 small onion, chopped
    2 cloves garlic, minced
    1 cup frozen mixed vegetables
    2 tomatoes, chopped
    2 Boca bratwurst, chopped
    salt and pepper, to taste
    1 tsp Cajun seasoning, or to taste


Heat the olive oil in a large pan. Saute onion, garlic, mixed veggies, tomatoes, and bratwurst until onions are soft and everything is heated through. Add cooked rice. Season with salt, pepper, and Cajun seasoning.

Makes about six 1 cup servings.
