Baked Apple and Raisin Oatmeal

3 1/4 cups skim milk
1/2 cup packed brown sugar
1 Tbsp trans fat-free margarine
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 3/4 cups old-fashioned oats
1 1/2 cups peeled, diced apples
1/2 cup raisins
1/4 cup chopped walnuts
2 tsp vanilla extract
You can adjust the brown sugar if it is too sweet for you. I have also used honey in place of the brown sugar. Try other fruits and nut combinations - blueberry and pecans, peaches and almonds, etc.
I usually bake this for a weeks worth of breakfasts.
Coat a 2-quart casserole dish with non stick spray.
In saucepan over medium low heat, heat milk, brown sugar, margarine, salt and cinnamon until the sugar is dissolved and the margarine is melted, about 3 minutes.
Remove from heat and add the oats, apples, raisins, walnuts and vanilla extract.
Spoon the mixture into the casserole dish. It will be very soupy.
Cover and bake for 30 minutes.
Remove from oven and allow to cool slightly.
Serving Size: makes 6- 1 cup servings
