This is a tasty sweet and sour soup. This is a tasty sweet and sour soup.
Number of Servings: 4


    2 TBS butter
    1 oniion, sliced thin
    2 cups zucchini sliced
    3 cups red cabbage shredded
    2 stalks celery, chopped
    4 c beef broth (no salt)
    1/2 cup cider vinegar
    1/4 cup brown sugar
    1/2 tsp salt
    1/4 tsp pepper
    1/3 cup raisins
    1/2 cup applesauce


Apples can replace the zucchini if desired.


Saute zucchini and onions in butter until tender. Stir in cabbage and saute 5 min. more. Add stock and vinegar and bring to a boil. Reduce heat and add sugar, spices and raisins. Simmer uncovered for 1 hour. Stir in applesauce.
