4 low carb, high fiber tortillas
1 cup shredded cheddar, 2%
4 tbsp canned diced jalapenos
1 tbsp olive oil
1 small red onion, chopped
1 small red bell pepper, chopped
2 cloves garlic, minced
2 tbsp canned chipotle peppers in adobo sauce, chopped
1 can black beans, rinsed and drained
1/2 cup of your favorite salsa
To pack a lunch, place 1/4 of bean mixture in a small plastic bowl with lid. Place a layer of plastic wrap over beans and place 4 quesadilla points on top of plastic wrap. Store with lid tightly sealed. Reheat in microwave.
Make bean mixture as directed, but part way through heating finely mash about half of the beans before adding salsa. Fill tortilla with mixture, cheese & diced jalapenos. Burrito should be served immediately.
Spray pan with cooking spray
Place 1 tortilla flat and cover with 1/2 cup shredded cheese. Sprinkle 2 tbsp diced jalapeno evenly over cheese. Place second tortilla on top of cheese. Cook over medium heat until you can see that the bottom tortilla has slightly shrunk in diameter. Flip quuesadilla using large spatula and heat second side. Set aside to cool. Repeat with remaining tortillas, cheese & jalapenos.
For the beans:
Saute onion, bell pepper, garlic & chipotle pepper in olive oil until onions are soft and translucent. Add beans and salsa and heat through, 5-7 minutes.
Using pizza slicer, cut each quesadilla into 8 slices, or points.
