1 Stick margarine
1 tsp. salt
2 lbs. (32 oz.) pork butt, cut in serving size cubes
1 clove garlic, mashed
3 1 lb. bags of luau (taro) leaves, striped and washed
Prep for luau leaves: Clean luau leaves by cutting the leaf from the stem and picking off the point of the leaf (about an inch). Strip down the outer fiber of the stem and cut into pieces.
Bring a large pot of water to a boil and add leaves and stems carefully, let boil down for about 5 minutes. Add about a tsp. of baking soda to neutralize the crystallite from the leaves. Repeat 2 more times.
Use in any recipe needing prepared luau leaves. At this point the leaves can also be frozen and used at a later time.
