Ingredients

    1/4 cup maple syrup
    1 teaspoon cornstarch
    approximately 4 large peaches, peeled, pitted and thickly sliced
    approx. 1 cup blackberries
    1/4 cup (1/2 stick) butter, cut into large pieces
    1 cup flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 1/4 cups lowfat buttermilk


Directions

Preheat oven to 375F.
Boil water to blanch peaches for peeling. Blanch peaches approx. 1 minute to loosen skin and remove. Chop into eights or 12ths depending on the size of the peach.

In a medium bowl, whisk together maple syrup and cornstarch. Add fruit and toss gently to coat; set aside.

Put butter into an 8-inch square cake pan. Heat in oven just until butter is melted, 2 to 3 minutes, then remove and set aside.

In a medium bowl, whisk together dries. Stir in buttermilk and form a thick batter.

Pour batter into pan over melted butter. Do not stir! Scatter fruit mixture evenly over top of batter. Bake until golden and bubbly, 50 to 55 minutes.
