    11oz Silken Tofu
    3 tbl nutritional yeast
    1tsp garlic powder
    1/3 tsp mustard powder
    1/2 tsp smoked paprika
    1/2 tsp salt
    1/4 tsp pepper
    2 tbl olive oil (or use oil from sun dried tomato)

    8oz whole wheat pasta
    1 cup roasted zucchini and eggplant (heated)
    6 sun dried tomatoes (drained of oil and sliced)


Prepare pasta according to package directions.
Meanwhile, combine sauce ingredients up to olive oil in food processor or blender. Pulse to combine. Add oil and blend until smooth.

When pasta is al dente, drain and set aside. Add sauce to empty pasta pot, and heat over low heat until warm. Add hot pasta and vegetables. Serve immediately.
