Ingredients

    1 Cup of Sliced Onion
    1 Cups of Sliced Green and Yellow Peppers
    1 Cup of Slice Mushrooms
    1 Cup of Slice Summer Squash or Zucchini
    1 Tablespoon of EVOO
    1 Cup Monteray Jack Cheese
    10 Corn Tortillas

Directions

Saute veggies in olive oil until tender. Place on warmed corn tortilla and sprinke 3 tablespoons of cheese.
