    28 oz small white potatoes or Honey Gold
    1 tsp salt
    1/2 cup low fat sour cream
    zest and juice from one lime


Cut potatoes in half.
Put potatoes and salt into a pot with enough water to cover the potatoes.
Cover and bring to a boil on medium high heat.
Cook until potatoes are tender, about 15 - 20 minutes.
Meanwhile, mix sour cream with lime juice and zest.
Drain potatoes and toss with dressing.
Add salt and pepper to taste.
