Ingredients

    2 small Summer Squash, peeled and chopped
    Half an Onion chopped
    3 Red Ripe Tomatoes, chopped
    12 oz Penne
    1 Tblsp Olive Oil
    1 Tblsp Garlic minced
    1 tsp Basil
    1 tsp Oregano
    1 tsp Parsley
    12 oz part skim Mozzarella Cheese
    1/2 cup of parmesean cheese

Directions

Cook penne according to directions
pre-heat oven to 350 degrees
heat oil over medium high heat and saute onion, garlic and squash until the onion is translucent
Add tomatoes and spices
cook until squash is tender
Mix veggies, pasta, and cheese in a medium bowl and put in prepared casserole dish.
Sprinkle with parm cheese and bake for 25 minutes.
Let sit for 5 and enjoy.
