Number of Servings: 1


    1 cup unsweetened almond milk
    2 T whole chia seeds
    1 T honey


Combine all ingredients and stir well. Leave the bowl on the counter and stir once a minute for about 10 minutes. This prevents the seeds from clumping as they absorb liquid.

Cover and refrigerate the bowl for at least 6 hours, or ideally overnight.

When you think of it, give the pudding a stir.

  • I tried this, even needed to cut back on honey (trying to do the LCHF keto thing). I also made it with Califia Farms Almondmilk Creamer which does use some sugar - I thought it was stevia - but still low carb at only 2 g of carbohydrates. In any case, this pudding is YUMMY!I'll be making more! - 5/13/16
