    1 Medium onion, chopped
    3 cloves garlic, minced
    1 1/2 tbs olive oil
    4 scallions (green onions) chopped -only using the greens
    1 cup chopped FRESH parsley
    5 oz low fat feta cheese
    2 14oz chick peas (prepare dried for lower sodium)
    Juice of 1 lemon
    dash red pepper flake


Look for dried chick peas and prepare them yourself to lower sodium. You could also reduce the feta amount or look for a low sodium feta (if it exists) to prepare the dish.


Sautee the chopped onion in olive oil until translucent, add garlic and cook another 2 minutes. Set aside and allow to cool.

In a bowl, combine rinsed chick peas, parsley, green onion and red pepper flakes. Toss lemon juice on top and stir again. When onions and garlic are cool, combine and mix well. Add the feta cheese (important that the onions are cool so it doesn't cause it to melt) and toss. Serve and enjoy.
