    1 pkg. (10 oz) frozed broccoli florets
    1/4 C margarine
    1/4 C all-purpose flour
    1 C milk 2% or skim
    1-1/2 C shredded cheddar cheese
    1/2 tsp salt
    1/4 tsp pepper
    1/4 C dry, seasoned bread crumbs
    2 T canola oil


Place frozen broccoli in saucepan and cover with water, boil for 3 minutes and drain. Spread broccoli evenly in a greased 2-quart casserole. In the saucepan, combine margarine and flour cooking over medium heat, stirring constantly until paste forms. Gradually stir in milk, add cheese, salt and pepper. Cook sauce until cheese melts and is thickened. Pour cheese sauce over broccoli. Top casserole with bread crumbs and drizzle 2 tbsp of canola oil over top. Bake at 350 degrees for 20 minutes.

If possible, leave frozen broccoli in the freezer bag and cut a slit in the bag to vent, or use a steamer bag and put in microwave for 5-6 minutes. In a glass bowl add margarine and flour and mix together wtih fork until it resembles course meal. Put in microwave for 1-2 minutes, stir. Put back in microwave for 1 minute, stirring again. If this resembles a paste then add milk and cheese, salt and pepper, stir. Place back in microwave for 2 minutes or so, stirring at 1 minute. Sauce should be thick and cheese melted. Drain and add broccoli to sauce and mix togther. Add bread crumbs and oil mixed together on top of that. Place back in microwave 3-4 minutes until topping is crunchy.
