    1.5 cups Mushrooms (sliced)
    2 tsp Olive Oil
    1.25 cup Mixed Sweet Bell Peppers (I like red and green)
    1 large Onion (chopped)
    2 large Garlic Cloves (minced)
    1 lb Chicken Breast (boneless, skinless and cubed)
    2 cups Stewed Tomatoes
    1.5 cups Carrots (thinly, sliced)
    3 Tbsp Apple Juice (1.5 oz)
    1 tsp Dried Thyme Leaves
    .75 tsp Paprika
    .5 tsp Dried Marjoram
    .5 tsp Sriracha Sauce (optional, and to taste)


I serve this over brown rice (not calculated into nutritional value)


In a frying pan, heat 1 tsp oil then add mushrooms and saute until lightly browned. Remove mushrooms and set aside.

Add peppers, onions, garlic and remaining 1 tsp of oil to pan, cook until the onions are soft, about 5 minutes.

Add the chicken to the pan and cook, turning the pieces occasionally just to brown slightly.

Add in the tomatoes, carrots, apple juice, thyme, paprika, marjoram and sriracha. Turn the heat down to a simmer. Cook, stirring occasionally for 10 -15 minutes or until the chicken is cooked through. Return the mushrooms to the pan and heat through. You can season with salt at this point if you are using (salt not calculated into nutritional value).
