    4 cups roasted winter squash
    1/4 cup brown sugar
    2 TBSP butter


Slice squash in 1/2 and scoop out seeds. Place cut side down on a baking sheet filled with about 1/2 inch of water. Roast for about an hour until tender.
Remove squash from peelings, and mix with butter and brown sugar. Mix until well blended. (Served mashed-potatoes style).

Serving Size: Makes 6 (1/2-cup) servings

Note: About 4 cups cubed squash yields about 3 cups whipped squash.
