Ingredients

    Ingredients:
    Feta Cheese, 1 oz
    Spinach, fresh, 10 leaf
    Onions, raw, 1 tbsp chopped
    Egg Beaters Southwestern Style, 6 tbsp (use plain egg beaters if you do not care for the southwestern, keeping in mind there may be a calorie difference).

Tips

Add a slice of multi-grain bread and some sliced fruit for a filling breakfast. Calories for omlet only.
Probably even easier as a scramble, but for me food presentation is also important and the same items scrambled doesn't look nearly so appealing :)


Directions

Prep - Chop spinach and onions, measure feta and southwestern style egg beaters.
Spray small frying pan with Pam (I use canola)
Have a pie tin handy.
Cook 7-10 minutes on medium heat depending on stove etc

Pour egg beaters in the fry pan, spread the spinach, feta and onions over the top. Cover with the pie tin (cooks the omlet thoroughly without having to flip it) once cooked easy comes of of fry pan and fold over for omlet look.
