    coconut oil
    vanilla extract
    zucchini - shredded
    greek yogurt
    baking soda


Cream together the coconut oil and honey. Add egg, vanilla, shredded zucchini, and yogurt. Mix to combine. In a small bowl, combine flour, salt, and baking soda. Add to batter, with walnuts, stir to combine. Pour into sprayed loaf pan. Bake at 325 degrees for 50 - 60 minutes, or until a fork inserted in the middle comes out clean. Let cool in pan for 15 minutes before tipping out.
