Number of Servings: 4

Ingredients

    1 1/2 cups green lentils, rinsed
    3 large yellow onions, peeled and diced
    3/4 tsp. ground cinnamon
    1/2 tsp. ground allspice
    3/4 cup brown basmati rice

Directions

boil lentils in 5 cups water, simmering for 30 minutes after water comes to boil. Add cinnamon and allspice and cook another 15-20 minutes until tender.
Bring 1 1/2 cups water to boil in saucepan. Add rice, bring to boil, reduce heat to medium and cook rice, covered, 45 minutes or until tender.
Heat large skillet over high, add onions and cook, stirring frequently, for 10 minutes. Add water 1-2 tblsp at a time, to keep onions from sticking. Reduce heat to med-low and continue cooking until browned, about 10 minutes
Mix all ingredients together, season with salt and pepper.
