Easy, versatile dessert that actually maintains some nutritional value Easy, versatile dessert that actually maintains some nutritional value
Number of Servings: 2

    1 cup blueberries
    1 cup sliced peaches
    2 tbs granulated sugar
1 jigger of Puerto Rican (light) rum
    1/2 cup water
    4 tbsp coconut milk, chilled

boil sugar, rum, and water until sugar is dissolved and liquid is reduced.

Pour over fruit (frozen can be used here, no need to thaw; but fresh is tastier), and let it soak in the refrigerator, covered, overnight.

Serve by spooning fruit out of its liquid and into a bowl. Ladle the top part of the coconut milk (it thickens a bit when chilled) over the fruit, about 2 tbsp per serving.
