A perfect way to eat your summer veggies! A perfect way to eat your summer veggies!
Number of Servings: 6


    1 bunch of snap beans (approximately 3 cups. I used a medley of green, purple, and yellow beans)
    1 Summer squash or zucchini
    2 tbsp balsamic vinegar
    1 tbsp olive oil
    3 cloves garlic, minced
    1 tbsp fresh chives, minced


Wash veggies and trim edges as needed
Slice squash into 1/4-1/2 inch slices (I use a mandolin)
Mix together the vinegar, oil, garlic, and chives
Toss veggies in the vinegar mix
Using either a grill basket or pan, cook the veggies over prepared grill for 25-30 minutes, to your preferred liking.
Remove from grill and serve as a side or add to a dish as I did.

Serving Size: 6 3/4 cup servings
