This is a delicious, not too sweet, cake that is big on flavor without any fat. This is a delicious, not too sweet, cake that is big on flavor without any fat.

    1 box white cake mix
    Zest from 1 lemon
    1 1/4 cup diet lemon-lime soda
    1/2 cup sugar
    1/3 cup lemon juice


The syrup glaze that's poured over the top makes the top of the cake super moist, so be careful when cutting because this part can get caught on a knife and rip off the whole top of the cake.


Preheat oven to 350* F and grease a 9x13 inch pan with nonstick cooking spray. In a bowl, stir together the cake mix, lemon zest, and diet soda until combined. Pour the batter into the cake pan and bake in the preheated oven for 20-25 minutes until a toothpick inserted into the center comes out clean. When the cake is finished baking, remove it from the oven and set the pan on a cooling rack; use a fork to poke holes all over the hot cake. In a small saucepan set over medium heat, melt sugar and lemon juice together until the sugar is dissolved. Pour the lemon/sugar syrup evenly over the poked cake and allow to cool completely before slicing and serving.
