Number of Servings: 2


    1 cup steamed cauliflower, processed in the food processor
    2 oz. part skim mozzarella cheese, divided
    3/4 c. shredded parmesan cheese, divided
    1 egg
    1 Tbsp oregano
    2 crushed cloves garlic
    1/3 c. pizza sauce


Preheat oven to 450. Steam cauliflower for 15 minutes then process in food processor. Add beaten egg, 1 oz mozzarella, half of the parmesan cheese, oregano, and garlic. Mix together then place on pizza stone covered with parchment paper and sprayed lightly with olive oil. Press into "crust" shape (round or rectangular, whichever you prefer). Bake at 450 for 15 minutes. Remove from oven, top with pizza sauce, remaining cheeses, and any veggies you like and return to oven until cheese is bubbly and golden around the edges.
