Those not on a Paleo or similar diet may find it a little high in fat; simply use less butter and substitute light coconut milk or another kind of milk for the coconut milk. Ingredients

1 russet potato, chopped
1 sweet potato, chopped
1 cup broccoli florets
1 cup cauliflower florets
1/2 cup baby carrots
1/3 cup coconut milk
1/3 cup butter
salt, pepper, and garlic powder TT
Directions
Steam or boil vegetables until soft.
Melt butter in a large pot and add vegetables and coconut milk. Mash with a potato masher or an immersion blender. You could also use a food processor, but you won't need a large pot.
