    3 Med. Chicken Breast
    1/4 tsp. Mrs Dash
    Canola Cooking Spray

    4 c. white rice
    4 strips celery, chopped
    1 thick slice onion, diced
    1/4 c. chopped green pepper

    1/2 Large tomato, diced
    1 large cucumber, diced
    1 thick slice onion, diced


Spray Non-stick skillet with spray. Season Chicken with Mrs. Dash and place in skillet over Med. Heat. Cover and cook for 20 minutes turning to brown. Cook until Chicken in cook thoroughly.
Boil Rice in enough water to cover and allow to swell. Add vegetables and cook until rice is cook to your tenderness desire.
Place all chopped vegetables in a bowl and toss. Cover and let stand until the rest of the meal is done cooking.
