Introduction

These aren't exactly "healthy", but they're the closest I've been able to come to the brand I love so much from my local Grocery store...which just so happen to be 580 calories!!! These are a little less than half of that, clocking in at 289 calories! They allow me to enjoy a favorite, for far less calories! Ingredients

    - 2 1/4 Cups Mashed overripe bananas
    -1/2 cup hard margarine, softened
    -2 eggs, room temperature
    -3/4 cup brown sugar
    -1 tsp. pure vanilla extract
    -1 tsp baking soda
    -2 c. flour
    -1/4 tsp. salt
    -4 semi-sweet baking squares, coarsely chopped

Tips

Do not overwork the batter, it will come out too dense!
You can use half applesauce, half margarine if you want to cut the fat and calories a bit. Do not completely replace the margarine with applesauce...it won't turn out.
You can use whole wheat or blended (half white, half whole) flour if you'd like to add some additional fiber.


Directions

1. Preheat the oven to 350F and cream the butter and brown sugar.
2. Add the vanilla, mashed bananas, and eggs to the butter and brown sugar. Whisk until combined.
3. Combine the flour, salt, and baking soda together in a large bowl.
4. Add the banana mixture to the flour mixture and use a spoon to combine until just moistened. Do not overwork.
5. Toss the chocolate in a little bit of flour and add to the batter. Use a spoon to toss until just distributed.
6. Spoon the batter into a 12-cup muffin pan (non-stick), distributing evenly between the cups.
7. Bake at 350F for 30-50 minutes or until an inserted toothpick comes out clean of batter.
