    1 Large Zucchini grated, excess water removed (just squeeze in a towel or paper towel.
    1/2 Parmesan cheese, grated
    1 C Panko bread crumbs
    sprinkle of nutmeg 1/8 tsp or less
    1/4 tsp Paprika
    1 clove Garlic, minced
    1 egg
    salt and pepper to taste
    Pam (I used olive oil spray but any would work)


Combine all ingredients in a bowl and mix thoroughly. Using a heaping tablespoon, form into patties.

Heat pan over medium and spray with cooking spray. Once heated, add patties and cook until golden brown. About 3-4 minutes per side.


Serving Size: Makes 12 patties (this varies depending on size of squash)
