Vegan Tofu Scramble Vegan Tofu Scramble
Number of Servings: 4

Ingredients

    1 package Firm Tofu
    I medium onion, diced
    1 cup green bell pepper, diced
    1 tbsp Earth Balance Buttery Spread
    1.5 tsp salt
    1 Dash pepper
    6 Basil leaves roughly chopped
    1 Avocado
    1 tbsp salsa


Directions

Makes 4 good size servings

Dice and saute onion and bell pepper in Earth Balance buttery spread until onions are translucent. Drain tofu (no need to press). Add tofu to onion and bell pepper saute. Add salt and pepper. Cook for 15 minutes so that the ingredients have time to mingle. Place scramble on 4 plates and top with 1/4 of avacado on each plate. Top with basil and salsa. Enjoy with a slice of Ezikial Sprouted Grain toast and fresh fruit.
