    Olive Oil, 0.25 cup
    Balsamic Vinegar, 0.25 cup
    Lemon Juice, 0.25 cup
    Garlic, 2 clove, minced
    Oregano, 1Tbsp fresh chopped, 0.5Tbsp dried
    Mint, 1Tbsp fresh chopped, 0.5 Tbsp dried

    Quinoa, 0.5 cup dry, prepared as per directions
    Peppers, red, 0.5 cup, chopped
    Peppers, other colour, 0.5 cup, chopped
    Zucchini, 1 cup, chopped
    Walnuts, 0.5 cup, chopped & toasted
    Feta Cheese, 0.5 cup, crumbled
    Black Olives, 8 jumbo, chopped
    Parsley, 0.5 cup, chopped

    Red Ripe Tomatoes, 2.5 medium whole
    Spinach, fresh, 5 cup


Rinse/ soak quinoa and prepare as per directions. When done, let cool.

Chop and toast walnuts. Let cool.

Prepare dressing, let sit.

Chop all other ingredients (saving the spinach and tomato) and combine. Mix in walnuts. Toss in dressing. Stir in quinoa.

Serve on top of a bed of fresh spinach, garnished by slices of half a tomato.

Serving Size: Makes about 5 - 1Cup servings on 1Cup of spinach leaves
