    3 Potatoes (red or other) cubed
    1 large carrot chopped
    1c celery plus leaves chopped
    1/2 large onion chopped
    4 garlic cloves minced
    4 leeks rinsed tops removed and chopped
    1/4 c dill weed
    2 TBS Cider Vinegar (for sauteing veggies)


Add more or less dill, pepper and cider vinegar to suit your taste!


Large stock pot saute all veggies except potatoes in cider vinegar (EVOO Optional) and 8c of broth and bring to a good simmer, add potatoes and half dill and pepper...stir in last of dill when soup is done, potatoes are tender
