    3/4 c 175 mL all-purpose flour
    1/2 c 125 mL quick-cooking rolled oats (not instant)
    1/2 c 125 mL sugar
    1 tsp 5 mL baking soda
    1/2 tsp 2 mL baking powder
    1/2 c 125 mL vegetable oil
    2 medium-sized ripe bananas
    2 eggs


I make mine by starting with the bananas and I mash them myself, add the eggs, sugar, oil and mix well. Then add the dry ingredients and mix with a fork until combined.


In a large bowl, stir together the flour, oats, sugar, baking soda and baking powder.

In the container of a blender or food processor, blend together the oil, bananas and eggs until really smooth. Pour the banana mixture into the flour mixture and stir just until combined.

Spoon batter into a well-greased bread pan. Bake at 375 F (190 C) for around 45 minutes or until center is cooked though.
