    1 boneless skinless chicken breast
    1/3 cup apricot preserves sugarfree is best
    1 tablespoon dijon mustard (you can use yellow, but a brown or dijon mustard is best)
    1 tsp red pepper sauce or flakes (optional)


Using different preserves and mustard changes the flavor a bit, the sauce can be poured over rice for a nice filling meal.


mixed the apricot preserves, mustard and red pepper sauce together in a small bowl. Slice the chicken into thin strips and place them in a baking dish. Spread the preserves on both sides of each slice. Place the dish in the oven at 350 until done.
