Number of Servings: 6


    1/2 large red onion, diced
    3/4 large red bell pepper, diced
    2 large carrots, sliced thin in half moons
    3 cloves garlic, minced
    14.5 oz can diced tomatoes with juices (no salt added)
    1.5 cups dry red lentils, rinsed and drained
    2.5 cups vegetable or chicken stock
    1 pinch chili powder, cumin, and oregano
    2 tbsp. homemade salsa (or roasted pepper sauce)


Saute onion, pepper, carrots, and garlic in a splash of stock until tender (medium to medium high heat). Add tomatoes, lentils, stock, seasonings, and salsa; stir to combine. Bring to a bubble, cover and simmer for 20 to 25 minutes (medium low to medium heat). Remove from heat, keep covered for 5 minutes before serving. Makes 6 generous servings.

This soup is very thick and can be used on sandwiches, pizza, quesadillas, wraps, or served over grains and baked sweet potatoes. If you like a runny soup, add more stock.
