Introduction

These muffins are an amazing pre or post workout snack. Great as an energy boosting breakfast. Healthy, filling and delicious. These muffins are an amazing pre or post workout snack. Great as an energy boosting breakfast. Healthy, filling and delicious.

Ingredients

    2 eggs
    2.5 cups whole oats (not instant)
    1 cup Greek yogurt, plain! Only vanilla was listed
    2 bananas
    3/4 cup brown sugar (unpacked) or whatever sweetener you like
    1/2 tsp baking soda
    1.5 tsp baking powder
    1 cup chopped strawberries

Tips

no flour recipe will stick to paper cups, use foil cups with paper insert removed or silicone cups if needed


Directions

Preheat oven to 400 degrees
Grease muffin tin with olive oil
Blend all ingredients except strawberries in blender or food processor till batter is smooth
Fill muffin cups till almost full
Top with chopped strawberries
Bake 20 - 25 minutes or till toothpick comes out clean
Cool, remove and enjoy!
