Introduction

Ingredients

    1/2 c. unbleached all-purpose flour
    1-1/2 c. self-rising yellow cornmeal
    2 t. baking powder
    1 c. nonfat milk
    1/2 c. applesauce, unsweetened
    1/4 c. egg substitute

Directions

Preheat oven to 425 degrees.
Spray an 8x8 pan with nonstick cooking spray.
In a medium bowl, mix dry ingredients.
In a large bowl, whisk together milk, applesauce, and egg substitute.
Add dry ingredients to the large bowl and mix together lightly (will be slightly lumpy).
Bake 20 min. or until top is lightly browned.

  • Yummm! Sounds good! think I will try it with whole grain flour instead of the all purpose flour for some added nutrition. Love cornbread with chili and bean soups. Thank you :o) - 2/2/08
