Introduction

Ingredients

    1 c. onion, chopped
    1 c. green pepper, chopped
    2 med. carrots, chopped
    1 c. orange juice
    2 t. paprika
    1 t. coriander (or sub. cumin)
    1/8 t. crushed red pepper
    14 oz. can diced tomatoes
    2 cloves garlic, minced
    1 can black beans
    1 c. brown rice


Directions

Cook rice according to package directions.
Simmer all but beans for 45 minutes. Remove from heat, stir in beans. Process one cup of bean mixture in blender or food processor and stir back in, heat through.

Serve over rice.

Optional toppings: shredded cheese, sour cream, lime wedges.
