Ingredients

5 qt salted water
1 lg bunch fresh brocoli, stem peeled and thinly sliced, florets broken into bite sized pieces
Saute:
2T good olice oil
1 med onion, 1/2 inch dice
6 lg garlic cloves, rough chopped
salt adn pepper to taste
1/4 t hot red pepper flakes, or to taste
1/3 C water
5-6 thin slices of salami, or Soppressata, Proscuitto, etc.
1 heaping T tomato paste
1/4 C tight packed cup of fresh basil. Could sub dried basil or another herb like rosemary, sage, thyme, etc.
1 lb penne or rotini pasta
1/2 C pasta cooking water
Juice from 1/2 lemon
Directions
1. Start the pasta water boiling and prepare broccoli.
2. Film 12-inch skillet with oil and heat at med-hi. Add onion, garlic, hot pepper flakes, and 1/3 C water. Bring to simmer, cover, cook for about 4 min, then uncover, raise heat and cook off the water.
3. Add salami, tomato paste, and basil. Saute about 1 minute, till fragrant. Off heat, cover, and set aside.
4. Once water is boiling, add pasta and set timer for 5 minutes. At 5 minutes, stir broccoli into the boiling water, and continue boiling till firm, approx 5 minutes. Scoop out 1/2 pasta water to save and drain.
5. Heat contents of the skillet back to a boil, taste and season, then add pasta/broccoli mixture and stir to coat. Off heat, sprinkle with lemon. Serve hot.
