    2 Lbs Sweet Potatoes (about 4 medium) peeled and quartered.
    3 Tbsp 2% Milk
    1/2 tsp Salt
    1/2 Cup Whipping Cream
    1/2 Cup (2 ounces) Shredded Mozzarella and American Cheese


Gravy from a jar could be added to the Moat around bottom or dipped onto sides.


Pre-heat oven to 350F
1)Bring 3 Qts water to boil and add sweet potatoes and cook 20-25 Minutes or until tender; drain. Add milk and salt to potatoes; mash with potato masher until light and fluffy.
2) Spray pie plate with nonstick cooking spray. Mound potatoes in pie plate, forming mountain shape about 4 inches tall and 5 inches across at base. Leave i inch space between plate edge and potato mixture. Make a deep hole in top of volcano.
3) Whip cream until soft peaks form; stir in cheese. Spoon whipped cream mixture into hole allowing excess to run down sides. Bake about 20 minutes or until bubbling.
