Ingredients

8 cups water
1/2 cup dried chickpeas, soaked overnight (or 1 can, rinsed and drained)
1/2 cup kidney beans, soaked overnight (or 1 can, rinsed and drained)
1/2 cup lentils
1/2 cup rice
1/2 cup bulgar wheat
1 large onion, thinly sliced
1/4 cup Canola oil
1.5 tsp salt
Directions
Add 1st 4 ingredients and salt to a large saucepan. Bring to boil, cover and simmer 15 minutes. Add rice and wheat, simmer 30 more minutes. Meanwhile fry onion in oil until reddish brown. Add hot onion and oil to soup (careful, it may splatter!) while simmering. Add 1 tsp cumin if desired or lemon juice can be added to taste.
