    2 1/4 Cups Dried Split Green Peas
    1 Large Onion, Diced
    2 Large Celery Stalks Chopped
    2 Large Leeks, Chopped
    2 Large Carrots, Chopped
    3 Large Garlic Cloves,Minced
    1 Herb Bouquet ( 3 Cloves Garlic, Mashed, 4 Allspice Berries, 2 Bay Leaves, 1 Tsp Thyme. Place all items in a rinsed Cheesecloth Bag)
    8 Cups Chicken Stock
    1/2 Lb Diced Ham
    1 Tsp Salt
    2 Tsp Fresh Ground Pepper


If you don't have an immersion (Hand-Held) blender, use a conventional blender, working in small batches to pure'e the soup.


Wash and drain peas. Place in a 4 Quart pot with Vegetables and Herb Bouquet. Add Chicken Stock and bring to a simmer. Skim the foam off the top of soup for several minutes until foam stops rising. Loosely cover and simmer about 1 1/2 hours, or until vegetables are tender, stirring often so vegetables don't stick to the bottom of the pan.

When done, remove Herb Bouquet from soup. Use an immersion Blender to pure'e. Add diced Ham, Salt and Pepper to taste. Optional, garnish with Croutons Fresh Grated Parmesan Cheese and fresh Chives.
