    4 egg whites
    1/2 c Lowfat Buttermilk
    Zest of 1 large Lemon
    apprx 1/3 c Smart Balance Light Butter
    2/3 c sugar
    1 1/2 c Whole Wheat Pastry Flour
    1 tsp Baking Powder
    1 tsp Sea Salt
    1 c Fresh Blueberries


Great warm with butter as Breakfast or anytime you desire something sweet


Pre-heat oven to 350

Combine all wet ingredients in stand mixer (eggs-sugar); blend till combined. Add dry ingredients; blend till wet then fold in blueberries.

Pour mix into loaf pan coated in cooking spray. Bake for 45-60 min, or until golden brown in top and wooden pick comes out clean
