Introduction

Ingredients

    3 C Black Beans
    4 C Corn
    2 C Red Onion Chopped
    2 Large Bell Peppers any color Chopped
    1 C Italian Parsley
    1/2 C White Wine Vinegar
    2 Tbs. Lemon Juice
    1 C Olive Oil

Tips

I love adding any color of bell pepper. Use Red Onion as it gives it a good kick! Can use canned, rinsed beans and corn if desired.


Directions

Mix all ingredients, season with salt & pepper. Whisk Vinegar, Juice & Oil very well, pour over and serve. Does not need to be chilled.

Serving Size: 20+ 1/2 cup servings -- Huge bowl!
