Ingredients

    White beans ( any king, we used Navy beans)
    Olive oil
    Minced fresh ginger OR dried use 1/2 tsp
    2 minced garlic gloves OR 1/2 tsp garlic powder
    2 scallions chopped thin OR 1/2 tsp onion powder
    1 stalk of celery, chopped fine
    1 small carrot, chopped fine
    1/2 tsp paprika
    1/2 tsp cumin
    1/4 tsp thyme leaf
    1/2 tsp salt to taste
    2 tbsp chopped parsley
    1/4 cup flour
    1 cup fine dry bread crumbs( we used toasted whole wheat bread)

Directions

1.)Heat oil on medium heat in a frying pan
2.)stir fry vegtables until soft 5-10 minutes
3.)Add veg, beans parsley,spicesmand bread crumbs to a food processor and combine until just mixed.
4.)Add 1 Tbsp of flour at a time until it is thick enough to form patties.
Optional: chill in the fridge for an hour to firm the mixture
5.)Heat a non stick skillet on medium
6.)Form the bean patties into 2-3 inch patties, 1/2 to 3/4 inches thick and fry 6-8 minuets, each side until nicely browned.

Serving Size: Will make 8 small patties, to serve 4...we made it into 5 bigger patties
