Ingredients

    2 c uncooked Penne rigate pasta
    6 oz. rotisserie chicken (white meat)
    6 tbs chopped raw baby carrots
    1 c chopped raw zucchini
    1 c finely chopped onion
    1 oz Mexican Blend Cheese



Directions

Boil pasta for 10 min. Add to the pasta the chopped zucchini and baby carrots, boil for another 10 min.

Drain and cool in refrigerator.

Measure 1 c servings in a bowl, add 1/6 c onion and 1/6 oz of cheese. Toss and serve.

Serving Size: Makes 6 1-cup servings
