    1lb pork tenderloin
    1/4 tsp salt
    1/8 tsp black pepper
    1/4 cup balsamic vinegar
    3 tblsp brown sugar blend splenda


preheat oven to 425 degrees

Cut pork into 1/2" thick medallions and sprinkle with salt and pepper and brown in the skillet until all sides carmelized this should only take a few minutes.

Remove pork; set aside. In the same skillet over medium to low heat add the balsamic vinegar and stir to loosen up all the brown bits from bottom of pan. Add the brown sugar and stir until mixed and becomes glaze.

Place pork back in pan and turn to coat place pan in roasting pan and place in oven and roast for 25 minutes or until pork is cooked glaze periodically with the glaze in the pan.
