Ingredients

1- 2 lb Beef Chuck Roast
6-8 medium potatoe diced
1-14.5 oz can of diced tomatoes (no salt)
1 LG onion diced
either or 1 lb bag of frozen "mixed" bell peppers or
2 green, 1 red, 1 yellow/orange bell peppers cut into strips.
1 TBS of Garlic Powder
1 TSP of Ground black pepper (I prefer to ground my own)
2 TBS of Sweet Basil Flakes or Basil
Tips
This is the perfect meal to make and freeze the leftovers for another day or even use as a lunch. I always make extra and use it for my hubby. This way I know he won't be tempted to eat at a fast food chain...he loves homemade stews!!
Directions
In a Slow Cooker add the 2 lbs of Beef Chuck Roast Garlic Powder, Black pepper, and Basil...cook on low for 3 hours turning once (do not add water). Pull the meat apart into smaller pieces...then combine the veggies. Stir gently until well blended. Cook on HIGH for another 2 hours or until potatoes are tender. ENJOY!!
