Number of Servings: 6
Ingredients

1/2 box stuffing (Perpared) (use for crust)
3 eggs
1 egg white
1 cup Bisquick
2 medium zucchini (grated - should equal about 3-4 cups)
1 med onion chopped
1 med red bell pepper diced (or matchsticked)
2 cloves garlic (pressed or finely diced)
Optional:
Shreaded cheddar
Ham (diced)
Bacon(diced and precooked)
other veggies
Directions
prepare the stuffing per the Box instructions. use half of the box and line the pie pan with it, press it down with your fingers to make the crust. Bake this at 375 for about 15 minutes to make a light crust. it doesnt have to be crunchy or hard, just heated well throughout. You dont want the egg mixture absorbing to the stuffing when you add that.
Next grate and chop all your veggies and put in a large bowl. add bisquick, garlic and eggs. mix thoroughly. place the mixture into the pie pan over the preheated stuffing mix. Cook another 40-45 minutes until quiche is cooked through. test with a toothpick.
