    3 sweet potatoes, cubed
    2 cloves garlic, minced
    2 tbsp olive oil
    3 tbsp parmesan cheese
    1/2 tsp dried thyme
    salt and pepper to taste


preheat over to 400. cover baking pan in aluminum foil

mix all ingredients together in a bowl, except salt and pepper. place in a single layer on the baking pan. sprinkle with salt and pepper.

roast in oven 40 minutes, or until sweet potatoes are tender. turn oven to broiler, let sit under broiler for 8-10 minutes (check often to ensure they do not burn)
