Ingredients

    Vegetable cooking spray
    Canola Oil, 1 tbsp
    3/4 cup coarsely chopped lean cooked Ham
    3/4 cup chopped Green Peppers
    1/2 cup chopped Onions
    1/2 cup chopped Celery
    2 cloves Garlic, minced
    2 cups canned low-sodium chicken broth
    1 (14-1/2 ounce) can no-salt-added Stewed Tomatoes, undrained and chopped
    1 cup cooked Chicken Breast
    2/3 cup White Rice, long grain
    1 Bay Leaf
    1 tsp dried whole Basil
    1/2 tsp ground Thyme
    1/2 tsp Chili powder
    1/4 tsp Salt
    1/4 tsp black pepper
    1/2 tsp Hot Sauce

Directions

Coat a large skillet with cooking spray, add oil. heat over medium heat until hot. Add ham, green pepper, onion, celery and garlic; saute 5 minutes. Stir in chicken broth and remaining ingredients and simmer covered, 15 minutes. Uncover and cook additional 15 minutes until rice is tender, stirring occasionally. Remove and discard bay leaf.
