    1 cup uncooked orzo
    2 cups baby spinach, chopped
    3 TBSP oil-packed sun-dried tomato halves
    3 TBSP red onion, chopped
    3 TBSP kalamata olive, chopped
    1/2 tsp pepper
    1/2 tsp salt
    1 6-oz jar marinated artichokes, undrained
    3/4 cup (3 oz.) feta cheese, crumbled.


NOTE: original says this is 338 calories, not 383.


Cook orzo as directed on package, omitting salt and fat. Drasin; rinse with cold water. Combine orzo, spinach, and next five ingredients in a large bowl.

Drain artichokes, reserving marinade. Coarsely chop them; add to orzo with the reserved marinade and 1/2 cup feta and toss gently. Sprinkle remaining feta on each serving.

Serving Size: 1.25 cups salad and about 1 TBSP cheese
