Number of Servings: 12


    3 ripe mashed bananas
    1/4 cup almond butter (or other nut/seed butter)
    1/2 cup sugar or 1/3 cup Stevia baking blend
    1 egg white
    1 tsp vanilla
    1-1/2 cups oat flour (can grind 2 cups old fashioned oats in food processor)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt (optional if nut butter is salted)
    1/4 cup semi-sweet or dark chocolate chips
    1/2 cup chopped pecans


Preheat oven to 350F. Line muffin tin with paper liners.
Mix first 5 ingredients well.
Stir together dry ingredients, and slowly add to banana mixture.
Stir in chocolate chips and nuts.
Bake for 20-25 minutes
